I know I am on a bit of a cocktail rampage at the moment. But this sunny weather just creates the perfect environment for mixing up gorgeous frozen cocktails. Also, I might have discovered the best low fat Recipe For A Pina Colada.

I rejoice at the fact that this amazing recipe is lower in fat because one Pina Colada is never enough. In fact I have to shamefully admit at this point, that I once put a stone on during a two week cruise. A fact I blame solely on my love for this deliciously creamy coconut cocktail. How to make the perfect low fat Pina colada

And what is my secret low fat ingredient I hear you ask? Substitute the coconut cream for coconut milk, and omg it tastes amazing. I used Alpro Coconut milk . (Not an ad, just something that makes my fave cocktail low fat)

Easy Low Fat Recipe For A Pina Colada

So here goes, grab your blender and be prepared to be wowed by this delicious low fat version of my favourite cocktail ever the Frozen Pina Colada.

Frozen Pina Colada Ingredients

  • 120ml pineapple juice
  • 80ml white rum
  • 60ml Alpro coconut milk
  • 10 chunks of pineapple (optional)
  • 1 small cup of ice ( I work on half of my smoothie maker cup.)
  • A wedge of  pineapple, to garnish (optional)
  • A slice of lime to garnish (optional)

Method

Slice your pineapple and chop the chunks to put into the blender, putting the sliced pineapple to one side for later. (Although the chunks are optional I find they thicken up the mix a little, and of course its part of my 5 and day, wink, wink.)

Slice the lime and put to one side. ( You can also use cocktail cherries, however they seem to be like gold dust this week)

What you will need to make a Pina colada

Half fill the blender cup with ice.

Measure out the rum, milk and pineapple juice and add to the the blender cup and mix.

Now blend, however you must blend long enough until your mixture is completely smooth to get this recipe for a Pina Colada perfect.

Serve garnish and enjoy.

If you prefer to use coconut cream them substitute with the milk.
