However this is also a meal I make for dinner parties which has been requested by friends again and again as its so delicious, and if you want a creamier more indulgent taste for entertaining chuck in a can of coconut milk, ok its not low fat then, but oh my the calories are soooo worth it. Alternatively you can use a low in fat coconut milk and still keep your curry healthy. If you don’t like coconut milk fat free plain yogurt is a great alternative to make your crock pot beef curry creamier.

- 1 large chopped onion
- 3 chopped garlic cloves
- 1 400g tin of chopped tomatoes, mashed
- 1 tsp salt
- 1 tsp freshly ground black pepper
- 1 tsp turmeric
- ½ tsp coriander
- 1 tsp cinnamon
- 1 tbsp garam masala curry powder
- ½ tsp cumin
- ½ tsp smoked paprika
- 1 tsp lemon juice
- 1 tsp brown sugar (you can choose to leave this out if you don’t want to use the syns)
- 200 ml beef stock
- 1 tbsp oil

What Beef Should I Buy For Slow Cooker Recipes?
It really doesn’t matter, and that’s what’s great in the slow cooker. I usually buy shin beef, which is the perfect stew meat, it’s super cheap and known for being tough. However slow cooking is perfect for tougher meats such as shin beef at it is cooking away all day. Thus is doesn’t disintegrate, but cooks into a beautiful tender tasting beef thus a delicious meal. It’s a great way to cut down on those shopping bills.
Top Tip For Preparing Slow Cooker Beef Curry Ahead
I bulk prepare my spice mix and keep my curry spice mix in small storage tubs, I tend to make in batches of 10-15 so I always a quick curry to pop in.
Method
- Heat the oil in a frying pan on the hob and brown off the chunks of beef, it also works well to roll the beef in plain flour and add a tea spoon of garlic.
- Fry the onions for a couple of mins until they become translucent.
- Add the chopped onions, garlic, spices, salt and pepper to the slow cooker.
- Mash the tomatoes and add to the slow cooker along with the brown sugar.
- Add the lemon juice and beef stock and stir.
- Put the lid on and leave on medium heat for 6 hr, stirring occasionally.
- Serve with rice and garnish with coriander and pomegranate seeds.
Recipe Variations
- I also cook this recipe with chicken and lamb and it is equally gorgeous.
- If you are not worried about be curly being low fat serve with naan bread, popadoms, mango chutney and cucumber raita.
Can you freeze the sauce for Slimming World Beef Curry
Yes, I always make up extra batches of the masala sauce and freeze in an airtight container, or you can make up curry spice pots in a batch. This makes is a super easy midweek recipe to grab from the freezer in the morning a leave to defrost during the day, all ready to prepare a quick meal. This sauce also works well with chicken.

I’ve never used a pressure cooker before. It sounds like it’s almost the opposite of a slow cooker (never used one of those either!) – cooking things in half the time rather than taking all day. Anything that makes the evening mealtime cooking less stressful is a good thing – I bet lots of people will be adding this to their Christmas list this year.

I swear by my pressure cooker cooks stew in less than an hour just by throwing everything in. But I found that the sauce of this recipe had dried up, I did add more liquid and only used 400grm beef, so had to try to mix more hot water in, but did taste lovely and only added 1/2 masala as hubby doesn’t like it hot. Will make it again though. Thankyou x
