Easy and Delicious Slow Cooker Red Cabbage for Roast Dinner

The challenge for me has been finding a delicius Red Cabbage recipe that’s easy to make and relatively low fat. I can have an extra Yorkshire pudding then.

Ingredients for Easy Slow Cooker Red Cabbage?

- 1 medium red cabbage, coarsely shredded.
- 1 large red onion, sliced
- 2 apples ( I used a pink lady or granny smith apples but whatever is in your fruit bowl)
- Cinnamon spice
- 1 tbsp Sweetener or brown sugar
- Red wine vinegar or apple cider vinegar 50 ml
- Balsamic vinegar 50ml
- Apple Juice 50ml
- salt and pepper to season
- 1 tbsp butter
- 1 slow cooker/ crock pot ( I use a Von Chef) which is great value at £19.99
How To Make Sticky Slow Cooker Red Cabbage

- Using a sharp knife chop the cabbage by cutting into quarters and discard the outer leaves and hard inner core, then slice into strips
- Halve the onion and chop into strips
- Remove the core and dice the apple
- Add all the ingredients into the slow cooker and gently stir
- Place the lid on the slow cooker and cook on high for 5 1/2 hours, stirring occasionally until it’s tender, you don’t want the cabbage to overcook and go mushy.
- If you don’t want to cook in the slow cooker or do not have the time, place it in a saucepan or oven-proof dish and cover it with foil; cooking this way is quicker. I would expect it to take 2 hours in the oven.
- Cook in batches a freeze in freezer bags for dinner-ready portions, which can be reheated in a pan or the microwave.
