Today we are going to give the traditional Rocky Road a spring-themed spin and create an oh so gorgeous Easter Rocky Road Recipe. Of course with Easter on its way I have to give this favourite classic rocky road recipe a seasonal makeover and fill it with mini eggs, all decorated with deliciously adorable Twix Easter Bunnies . And let’s face it even us grown-ups love a sweet treat, Easter dessert.
The great thing about this recipe is its a great easy no bake treat to make with kiddies. Also to make ahead for parties and gatherings and fill decorated baskets for an Easter Egg Hunt.
Easy Easter Rocky Road Recipe
Ingredient Quantities
- 200g Good Quality Dark Chocolate
- 200g Cadburys Milk Chocolate
- 100g Mini Marshmallows
- 2 Tubes of Mini Eggs
- 200g Digestive Biscuits
- 125g Unsalted Butter
- 2 Tbsp Golden Syrup
- 1 Bag of Kit Kat Easter Bunnies
How To Make Easter Egg Rocky Road
Preparation
Start by lining a square tin with grease proof parchment paper with enough to create an overhang. You will use this later to flatten down your recipe.
Break up all of the dark and milk chocolate into a bowl. Add the syrup and butter and put to one side.
Now break up the mini chocolate eggs into a large bowl, you want to break them up into large pieces, maybe in half, not too small. I find putting them in a sealable bag and hitting them with a rolling pin does the job. (Leave a few whole eggs to one side to garnish afterwards)
Next break up the digestives into the bowl and mix in the the mini eggs, the digestives need to be smaller in size than the Mini Easter Egg pieces it’s ok if there are small pieces and crumbs too.
Melt The Chocolate
You can now melt the chocolate and butter mixture, I popped it into the microwave for 1 minute in a microwave-safe bowl, but watched it until the butter had melted. As soon as the butter melts take it out and stir. Don’t worry if the chocolate hasn’t melted, simply stir it with a rubber spatula and the butter very quickly melts the chocolate.
Gradually mix the biscuit mix and marshmallows until it is thoroughly coated with the melted chocolate mixture, it takes quite a bit of mixing. Give it a good stir with a wooden spoon to ensure all the biscuit is thoroughly coated.
Pour the Easter Chocolates Rocky Road mixture into the lined tin, and evenly spread into all of the corners, once it is evenly fold place a piece of grease proof paper on top and squash it down to compact.
Now decorate the top of your Rocky Road with the mini bunnies, mini eggs and marshmallows to give your Rocky Road and Easter feel.
Refrigerate To Set
Pop your Easter Rocky Road into the fridge to set for at least 3 hrs.
Once your Rocky Road is thoroughly set remove from the fridge and slice into 20 squares with a sharp knife. I usually get my squares dead even, but honestly I had an issue cutting through the cute chocolate bunnies.
How To Store Your Crunchie Rocky Road
Store in an airtight container in the refrigerator, it melts pretty quickly if left out so keep it cool. It’s ok to serve on a buffet, or charcuterie, however leaving out overnight will make it soft. You can store it for up to a week, any longer and it won’t taste as fresh.
Rocky Road Recipe Variations
If you are not a fan of dark chocolate you can substitute the dark chocolate for milk chocolate. However the dark chocolate flavour is not overwhelming, if anything it balances the sweetness of the Rocky Road Bars. You can also add raisins for extra texture and flavour.
