I wanted to share this ever so simple recipe for popcorn rocky road bars, the perfect family treat, that makes a wonderful snack for kids.

Why makeĀ popcorn rocky road candy bar recipeĀ when you can buy something similar I hear you ask? However I am a firm believer in knowing what’s in our food, and as such like to try new simple recipes for treats that all the family will enjoy.

But also, all the family can easily make. Yet are also lower in fat and carbohydrates making them perfect for a sweet family treat, but allowing you to have control over portion sizes, fat, calorie and carb intake.

When I followed slimming world I used to love the Slimming World Rocky Road Hi Fi bars, these are not the same! But a blooming great substitute, it’s the combination of chocolate, popcorn and marshmallow that does it for me.

Easy To Batch Cut Into Treat Size Portions

I cut my batch into 12 portions thinking they would be handy cereal bar size. Alternatively cut them into 24 bite-size pieces, perfect for kiddies party food, or for a kids lunch time snack.

Having a teenager with type 1 diabetes who LOVES chocolate  is not a winning combination! It’s difficult to find chocolate snacks that are lower in carbs. However in small portions these offer that chocolate fix teenagers want without overloading on carbs. Ok no carbs is always better, but find me a diabetic teen that doesn’t try to sneak treats in?

Anyhow I digress, family sweet treats are all about moderation and knowing what you are eating so you can make and informed choice. And giving our boys options about what they eat works for us. I find denying treats at all created that irrational desire to have what you can’t have.

How to make low-fat and low-carb Popcorn Rocky Road Candy Bars.

First Decide On How Much Chocolate You Want To Use? Yes, You Have A Choice!

I used 100g to keep the chocolate, fat calorie and carb levels lower, thus a healthier family treat.

Alternativly you can use 200g and go all out on the chocolate, this makes the bars a lot more solid. However with this in mind and to keep my bars solid but lower in chocolate I ensured I fully mixed and compressed the mixture before it went into the fridge which worked well.

Marshmallow Cereal Bars

Ingredients

  • 60g small marshmallows 
  • 75g Special K or bran crushed down a little ( but not too much)
  • 4 tbsp golden syrup
  • 100g milk or dark chocolate 
  • 50g sweet and salty popcorn
  • 1 sheet of grease proof paper

Method, Popcorn Rocky Road Candy Bars

Measure the popcorn, special k and 90% of the marshmallows into a bowl and mix together well (Leave extra marshmallows to one side for later)

Add the golden syrup and coat all of the mixture (This takes a bit of doing, be persistent)

Line a medium glass dish with greaseproof paper ensuring you leave enough to cover the top of the mixture when the bowl is filled

Put 2 squares of the chocolate to one side and melt the rest of the chocolate in the microwave, heat 30 seconds at a time until it is thoroughly melted, keep mixing throughout!

Pour the chocolate into the popcorn mixture, mixing until all the the mix is covered.

Transfer this to your bowl with grease proof paper, cover the top with the grease proof paper and compress as much as possible. 

How To make Low Fat Rocky Road Bars the perfect family treat

Sprinkle the remaining marshmallows and compress again.

Cool in the fridge to set for 3 hours. 

Once set, melt the remaining chocolate in a plastic piping bag in the microwave for 30 seconds at a time until melted, once melted snip the end of the bag off and drizzle over the top of your Rocky Road Popcorn Bar and return to the fridge to set

Cut into 12 equal slices and serve

If you would prefer bitesize pieces cut into 24 pieces and half the nutritional value per bar

Allow 3 hours in the fridge to set.

How To Keep The PopCorn Rocky Road Candy Bars

I kept mine in an airtight container in the fridge, they will keep for 5 days. However they never last that long in this house!

Recipe Variations For My Rocky Road Bars

These will not be low fat, however for an extra twist or flavour alternatives check out the below.

  • Add a drizzle of hot toffee over the top once cooled
  • Swap the chocolate for white chocolate
  • Add a handful of dried raspberry flakes
  • For a festive twist add a handful of cranberries and spoonful of cinnamon
  • For a great party treat add smarties
  • Or mini eggs for easter
