I love summer, but there’s an excitement about cozy knits, crunchy leaves and looking forwards to Christmas. And this delicious beef and ale stew slow cooker recipe is a dish that not only screams comfort food but the taste is incredible. But is also one of those meals you wake up the morning after and could eat it all again. 

The beer based casserole sauce really is special, and super easy to pop into the in slow cooker in the morning. Of course you could cook it in the oven, however long cooking this recipe is what makes this cheaper cut of beef sooo tasty!

This Beef And Ale Stew Slow Cooker Recipe Is A Great Time And Money Saving Recipe

In life we prove every day that we can boss multi tasking. However we forget how chaotic after school is in the autumn term. Thus having a delicious beef stew recipe that we can batch cook and freeze a few portions is priceless.

Slow cooker recipes really are the way forward. Throw it all in the pot in the morning and come home to a delicious meal full of flavor in the evening, win, win. Especially if you have cooked enough to freeze for next week and the week after.

Plus this means you can use cheaper cuts of meat, as slow cooking meat in the crockpot makes it super tender. Plus it’s packed full of vegetables, throw some potatoes in to roast and you have the perfect meal.

How to Make Beef And Ale Stew In The Slow Cooker?

Shopping List

  • 750 g of diced brisket beef
  • 3 sticks of celery 
  • 4 carrots 
  • 10 mushrooms
  • 2 large onions 
  • 3 Cloves of garlic
  • 2 twigs of fresh rosemary  ( Are they called twigs or sprigs?)
  • 1 500ml bottle of ale
  • 3 tablespoon’s plain flour 
  • 1 x 400 g tin of chopped plum tomatoes 
  • 100 ml beef stock
  • 1 cup of frozen peas
  • Salt and pepper to season
  • 2 tbsp extra virgin olive oil.

How To Cook

Chop the onions, mushrooms, garlic, carrots and celery and use the chopped large onion to line the slow cooker.

Now put the flour in a bowl, season with salt and pepper, add the garlic and then mix in the beef to coat it well.

Heat the oil in a frying pan and transfer the coated beef in batches, and fry to brown it off before laying on top on the onions in the slow cooker. ( This is to pack the flavour in, however some days I just throw it all in the pot without frying)

Now add the tinned tomatoes and stock before giving the mixture a good mix. (You could substitute this for tomato paste or puree)

Pour the ale into the slow cooker

Add the celery, carrots and mushroom and stir in before pouring in the bottle of stout beer and strip the rosemary to add to the pot.

Add rosemary to the slow cooker, stir and replace the lid

Place the slow cooker lid and leave on medium to high heat for 6.5 hrs, then add the peas. Also if you would like to add dumplings add them now using cooking tongs. Check out my easy dumpling recipe.

Place the dumpling in the slow cooker 30 minutes before the meal is ready

Leave for another 30 minutes before serving and enjoy.

Serve With Roast Or Mash Potatoes

Serve your slow cooker beef stew with the potatoes or your choice, using the liquid as a delicious gravy. If it is not as thick as you would like use some cornstarch to thicken the gravy, you can also add some extra stout for flavour. 

Can You Freeze This Slow Cooker Steak And Ale Stew?

Yes cook up a big batch and freeze on the day you make it. Transfer to click lock containers, allow to cool then freeze. You can keep in the freezer for up to 3 months, but I promise you it won’t last that long!
