My Rocky Road recipe is a real family favourite. While I don’t eat loads of chocolate, I love the occasional sweet snack. But the Christie boys love any treat. This Easy Santa Claus Christmas Rocky Road Recipe is super sweet and great for a snack or for Christmas entertaining.
I have used Maltesers Christmas Santas to decorate as it’s a great Elf surprise to leave from Santa on Christmas Eve, but you could also decorate with chocolate elves or reindeer.

This Is An Easy Santa Claus Christmas Rocky Road Recipe

Of course, you can buy Rocky Road if you want an easy option, but homemade is the best. Not only can you choose exactly what ingredients you put in it, but you can also tailor the recipe to suit your tastes and family. These festive rocky road biscuits have the colours and flavours of the season. With bright-coloured smarties, a ginger flavour and cute Santas on top.

Ingredients

- 100g Dark Chocolate
- 200g Milk Chocolate
- 100g Mini Marshmallows
- 100g Smarties
- 200g Ginger Nuts
- 125g Butter
- 2 Tbsp Golden Syrup
- A 5 Pack of Kit Kat Chocolate Santa’s
How To Make Christmas Rocky Road With Added Santa’s

Start by lining a square tin with grease-proof paper and breaking up the dark and milk chocolate into a bowl. (Put 50g of milk chocolate to one side to drizzle later) Add the syrup and butter and put them on one side.
Break up the ginger biscuits in a plastic bag using a rolling pin. You want them broken into small pieces but not crumbs.
Melt the Chocolate and Butter

Now melt the chocolate and butter mixture; I popped it into the microwave for 1 minute in a heatproof bowl but watched it until the butter had melted. As soon as the butter melts, take it out and stir. Don’t worry if the chocolate hasn’t melted; stir it with a spatula, and the butter very quickly melts the chocolate.
Mix It All Together

Gradually mix the biscuit mix, Smarties, and marshmallows ( Leaving a few on one side for the topping) until thoroughly coated with the melted chocolate mixture. Mixing the biscuits takes quite a bit to ensure they are thoroughly coated.
Pour Into A Lined Tin

Pour the Christmas Rocky Road mixture into the lined tin and evenly spread it into all of the corners; once it is evenly spread, place a piece of greaseproof paper on top and squash it down to compact.
Melt the remaining chocolate in the microwave and drizzle over the top of the flattened Rocky Road. Now sprinkle with marshmallows and Smarties, and pop your chocolate Santas on top.
Pop The Santa Clause Christmas Rocky Road Into The Fridge To Set For At Least Three Hours

Once your Christmas Rocky Road is thoroughly set, remove it from the fridge and slice into 20 squares with a sharp knife.
How To Store Your Santa Clause Christmas Rocky Road

Store in an airtight container in the fridge, it melts pretty quickly if left out so keep it cool. It’s ok to serve on a buffet, or charcuterie, however leaving out overnight will make it soft. You can store it for up to a week, any longer and it won’t taste as fresh.
Recipe Variations

If you are not a fan of dark chocolate you can substitute the dark chocolate for milk chocolate. However the dark chocolate flavour is not overwhelming, if anything it balances the sweetness of the Rocky Road Bars. You can also add raisins for extra texture and flavour.
If Ginger Nuts aren’t your thing, you can swap it for this for almost anything, including

- Anything with a bit of favour and texture will give this recipe and new and different flavour.
