You know when you are entertaining and you have a vision, you have friend coming for dinner and want to start with smoked salmon canapés served with champagne or. cocktail, but you just can’t get what you need to create recipe you want? Certain products like blinis can be so hard to get, and I tried EVERYWHERE last week! However was determined to make my own smoked salmon canapes, thus I decided I would make home made crostinis from freshly baked bread, and create my own home made canapés.
Now the benefit of this is that it’s easy, and costs less and makes great finger food as the crust is delicious and crispy. I also chose to use caviar which did push the price up a little bit. But a little goes a long way, and its personal choice, caviar is not something you need to add to make your salmon canapés show stopping. And you can buy cheaper alternatives such as lump fish caviar which also tastes great. Off add a sprig of dill for additional flavors.
As long as they are simple to make, you can make them ahead and look great then it has to be a winner? Entertaining is about making life easier for yourself, it shouldn’t be stressful. Thus having a few go to recipes to pull out of the bag saves so much grief. Especially if you are planning this recipe for a dinner party as an appetizer or for a buffet, but want to enjoy the event yourself too.

How To Make Easy Smoke Salmon Canapés For Entertaining

How To Make Easy Smoked Salmon And Caviar Cold Canapés
Make Your Crostinis
Start by pre heating the oven to 150 degrees, and slicing the French stick into thin slices. Now pour a glug of oil into a small bowl and add half a tsp ground rough salt.
Lay out the French bread slices onto a tray and with a pastry brush, brush the oil onto the top of the bread slices. Place in the oven to bake for 10-15 minutes until it is crunchy but soft in the middle. You want a little bite but not for the bread to go hard. Once its ready take out of the oven to cool.

Build Your Smoked Salmon Canapes
Plan a strategy for the design of your Smoked Salmon Canapés, I figured not everyone loves salmon so make every other canapés a cucumber canapés. (Ok this is simple but you can mix it up and add pastrami or salami.)
Prepare the smoked salmon by slicing into small strips and rolling up, each piece wants to be around 1×2.5 inches. Then slice the cucumber Into thin slices.
Once the bread has cooled spread with cream cheese, this can be as thick as you want and don’t worry too much about perfection, your canapés will look great with all the colour.
Now it’s time to build your canapés, I go for placement to look pretty, however functional is fine too. Start by putting a roll of salmon on every other crostini and position the outside row of a serving tray.
When you get to the next row, stagger your salmon so you get a chequerboard effect, do the same on the next row. Next, put cucumber slices on the rest of the canapés, this will create a variety of colours and textures.
If you plan to use caviar I would advise only putting it on 50% of you canapés. This gives choice to those who don’t enjoy caviar, I would suggest doing this and leaving a small bowl of caviar with teaspoons on the side to give your guests the option.
Storing Your Canapés If You Make Them Ahead
If we are entertaining I like to be prepared, special occasions are only special if you can enjoy them yourself too right? Thus I prepare in the morning and pop my canapés in and airtight container in the refrigerator to keep them fresh. However do remove half an hour before you served as no one likes cold crostini bread.
