This year I have rekindled my love for cocktails: especially my latest discovery, this easy Frozen Mango Daiquiri recipe. I have so enjoyed making smoothies and slushes with the boys. But whilst I love my little blender, I adore it so very much more because I can quickly and easily rustle up a mean frozen mango cocktail with white rum full of Caribbean flavours and delicious sweetness. Perfect for summer drinks on the patio, backyard, garden or even on a picnic in the park.

How To Make This Frozen Mango Daiquiri.
- Chop the mango into small pieces and blend, then add the vodka and rum and mix again.
- Blend the ice to a slushy consistency and add to the mango mixture.
- Add the juice and give a quick pulse until your frozen cocktail has a creamy ice cream-like consistency. The mix needs to be slushy and smooth. If you do not blend for long enough, you will have an icy lumpy texture which is not as pleasant.

Recipe Variations Of This Frozen Mango Daiquiri
- For other versions of the frozen mango cocktail with rum, one small cup of passionfruit and mango sorbet (optional, you can use mango juice)
- Alternatively, should you want a Virgin mocktail Daiquiri leave out the alcohol for a deliciously refreshing iced smoothie?
- Add chunks of pineapples for an extra fruity twist.
- Cointreau or triple sec adds extra flavour.
Tips For Making The Perfect Frozen Cocktail
- You can use a powerful blender. A blender with a strong motor can pulverise the ice and other ingredients, resulting in a smooth and consistent drink.
- Use crushed ice. Crushed ice will help to create a smoother texture and will also help to prevent the drink from becoming too watery.
- Don’t over-blend. Over-blending can make the drink too watery and can also damage the blender.
- Use frozen fruit. Frozen fruit will help to add flavour and sweetness to the drink, and it will also help to keep the drink cold.
- Add a splash of alcohol. A splash of alcohol will help to add flavour and complexity to the drink.
- Garnish with fresh fruit or herbs such as mint. A garnish will add a touch of elegance to your drink and will also help to enhance the flavour.
