Does anyone else love Biscoff? The boys are obsessed, and as they are also fans of my Rocky Road Recipe, so I thought it was time I created a Biscoff Rocky Road Recipe. This is perfect for lunchtime snacks, treats with a cup of coffee and adding to Charcuterie Boards. a

Easy Biscoff Rocky Road Recipe
Ingredients
- 200g Dark Chocolate (I used Green and Blacks ginger dark chocolate, but any is fine. However, the ginger gave it the perfect kick)
- 200g Milk Chocolate
- 100g Mini Marshmallows
- 150g Biscoff
- 100g Chocolate Digestive Biscuits
- 125g Butter
- 2 Tbsp Golden Syrup or Runny Honey.

How To Make Biscoff Rocky Road
Start by lining a square tin with grease-proof paper and breaking up all of the dark chocolate and 150 g of the milk chocolate into a bowl. (Put 50g of milk chocolate to one side to drizzle later) Add the syrup and butter and put to one side.
Next, break up the digestives and Biscoff, I pop them in a ziplock bag and use a rolling pin to break them up. You want the piece to be small but not too small, as the rocky roads will not have any texture.

You can now melt the chocolate and butter mixture, I popped it into the microwave for 1 minute in a heatproof bowl, but watched it until the butter had melted. As soon as the butter melts take it out and stir. Don’t worry if the chocolate hasn’t melted, simply stir it with a spatula and the butter very quickly melts the chocolate.

Gradually mix in the biscuit mix and marshmallows until they are thoroughly coated with the melted chocolate mixture. It takes quite a bit of mixing. Give it a good stir to ensure all the biscuits are thoroughly coated.

Pour the Biscoff Road mixture into the lined tin and evenly spread it into all of the corners; once it is evenly spread, place a piece of grease-proof paper on top and squash it down to compact.

Melt the remaining chocolate in the microwave and drizzle over the top of the flattened Rocky Road and sprinkle with marshmallows. I use the ziplock bag and cut the corner off once melted to make drizzling easier.
Pop the Rocky Road into the fridge to set for at least 3 hrs. Once your Biscoff Rocky Road is thoroughly set, remove from the fridge and slice into 20 squares with a sharp knife.
How To Store Your Biscoff Rocky Road
Store in an airtight container in the fridge, it melts pretty quickly if left out so keep it cool. It’s ok to serve on a buffet, or charcuterie, however leaving out overnight will make it soft. You can store it for up to a week, any longer and it won’t taste as fresh.

Recipe Variations
If you are not a fan of dark chocolate you can substitute the dark chocolate for milk chocolate. However the dark chocolate flavour is not overwhelming, if anything it balances the sweetness of the Rocky Road Bars. You can also add raisins for extra texture and flavour.
