Anyone that reads my blog will know that this year I have rekindled my love for cocktails. Especially my latest discovery the Frozen Mango Daiquiri?
I have so enjoyed making smoothies and slushes with my Nutri Ninja for the boys. But where this amazing little blender really comes into its own. The true reason I love it so very much is the fact that I can quickly and easily rustle up a mean Frozen Mango Daiquiri recipe.
Who doesn’t love a frozen Mango Daiquiri?
I discovered these glasses of delight back in Easter when we were staying at Ikos Resorts. Previously I had been a die-hard Pina Colada kinda girl. I think it stems from being a child of the 80s. That was until I tasted the Mango Daiquiri and OMG it was like an amazing revelation, fluffy, refreshing and so so tasty.
I may have enjoyed one or two during our trip, andcan’t wait until out next trip. I have visions of me sat on a comfy lounger sipping said cocktail. Watching the Joe splashing in the pool and Jack sat 10 sun-beds away being ever so cool.
Anyhow I decided I had to recreate this amazing Mango Daiquiri cocktail and set too researching and trying out different variations. And I think I may have got it. I have also tested it on one of my BFFs. She is finding it tough, having to keep being subjected to cocktail testing every time she visits, but is soldiering on without complaining. That is the sign of a true friend, to keep showing up and continually testing all these new cocktail recipes is nothing short of heroic.
But as a fellow Ikos lover she was vital in the testing stage to get the recipe exactly right. And it may have taken a few attempts to get there.
How to make a Mango Daiquiri?
- 2 Fl oz vodka
- 2 Fl oz light rum
- 1 mango
- 1 large cup of ice
- 1 small cup of passionfruit and mango sorbet (optional, you can use mango juice)
- Chop and blend the mango then add the vodka and rum and blend
- Blend the ice to a slush consistency and add to the mango mixture
- Add the sorbet and give a quick pulse
- Serve and enjoy
