I can’t claim the glory for this incredible Chicken Leftover Pie Recipe. It is in fact the creation of Mr. Christie who loves to dabble in the kitchen even more than I do. When Chris announced he was creating a pie from the leftovers of our roast chicken dinner my expectations were low. How could a pie made from leftovers be good? However, let me tell you, this simple chicken leftover pie, made from left over roast dinner is to die for. Especially if you love roast dinner or pie?
What Is Chicken Leftover Pie?
It’s exactly what it says on the tin. A pie made from Christmas dinner or roast dinner left overs. Additionally it doesn’t have to be chicken, it can be any meat or no meat for a vegetarian version which would taste equally delicious.
Ingredients For My Chicken Leftover Pie Recipe
There is no exact science for this delicious piece of heaven in a pie. It’s all about cooking a bit extra of everything and throwing it all in a pot. We also add an extra meat to give the pie a bit of variety.
For our roast dinner pie we used.
- Chicken
- Carrots
- Sweet potato
- Sweet red cabbage
- Brussels sprouts cooked with pancetta
- Pea’s
- Potatoes
- Stuffing balls
- Pigs in blankets
- 1 Packet of diced beef
- Salt
- Pepper
- 1 batch of home made pastry. ( Buy if you don’t have time)
How To Make Chicken Leftovers Pie
Preheat the oven to 200°C/400°F/Gas Mark 6
If you add an extra meat to your dish, cook before adding to the pie. In our case we fried the beef before adding.
Chop up any potatoes or large veg and throw into a bowl.
Add all the leftovers and mix before adding a cup of frozen peas and the cooked meat and season with salt and pepper.
Pour the pie mixture into a cooking dish and top up with thick gravy so its just covering the mixture.
Top with shortcrust pastry, ensuring you cut vents for steam to escape.
Now do an egg wash before placing into the oven for 20-30 minutes until golden brown.
Can You Freeze This Chicken Pie Recipe?
Yes, we try to make 2 pies at a time, save one in the fridge and freeze one.
This is all about cooking up what’s leftover from Christmas dinner or Sunday roast and creating the most delicious midweek meal. One you can prepare and freeze until you have one of those days where there is no time for cooking. Alternatively batch cook and freeze a few pie’s.
I promise there is nothing more hearty and warming than a big portion of roast dinner in a pie on a cold winters night.
