Autumn is creeping in and its that time of year when Sunday wouldn’t be complete without a roast dinner. There is nothing better than lighting the log burner and enjoying a chilled Sunday afternoon as dinner cooks away in the kitchen. Additionally, no roast dinner is complete without a generous helping of Slow Cooker Red Cabbage.

The challenge for me has been finding a Slimming World Red Cabbage slow cooker recipe. Not because I religiously follow slimming world. More that I try to ensure I substitute recipes where I can to live a balanced lifestyle.

As a result, this sweet slimming world red cabbage recipe is deliciously sweet and tasty but only has 1.5 syns per portion. This is a game changer for me, as the recipe I have been using for years has a LOT of butter in. Now don’t get me wrong it tastes AMAZING. But its nice to have a low fat healthy alternative.

1 medium red cabbage a red onion, apple ( I used a pink lady apple but whatever in in your fruit bowl) cinnamon, sweetener, white wine vinegar, balsamic vinegar and water.

Not only is it packed with vitamin c, it contains fibre to aid digestion and can also help keep inflammation at bay. Add the fact that it’s fat free and delicious cooked and served raw makes it a wonder vegetable.

Can you tell I love cabbage? Especially sweet red cabbage on roast dinner. But seriously, how many vegetables can you cook up to taste so sweet and delicious?

Braised cabbage is also a staple for serving with Christmas Dinner and pulled pork and apple sauce.

How To Make Sweet Slimming World Red Cabbage For Roast Dinner.

Easy Slow Cooker Red Cabbage Recipe

Prep Time: 30 minutes

Cook Time: 5 hours, 30 minutes

Total Time: 6 hours

Ingredients

  • 1 medium red cabbage
  • 1 red onion
  • 1 apple ( I used a pink lady apple)
  • 1/2 tsp cinnamon
  • 2 tbsp sweetener
  • 3 tbsp white wine vinegar
  • 3 tbsp balsamic vinegar
  • 3 tbsp water

Instructions

  1. Chop the cabbage by cutting into quarters and discarding the out leaves and hard inner core, then slice into strips
  2. Halve the onion and chop into strips
  3. Remove the core and dice the apple
  4. Add all the ingredients into the slow cooker
  5. Place the lid on the slow cooker and cook on high for 5 1/2 hours, stirring occasionally.

Notes

If you don’t want to cook in the slow cooker, or do not have the time place in an oven proof dish and cover with foil, cooking this way is quicker. I would expect it to take 2 hours in the oven.

Cook in batches a freeze in freezer bags for dinner ready portions, which can be reheated in a pan or the microwave.

Yes you can, I batch cook and then bag up into portion ready bags. This is perfect for those Sundays when you want to cook a quick roast, or to serve with pulled pork or pie.
