Especially with food being a huge feature of the day and something we all look forward too. And this Recipe For Easy Carbonara With No Cream is something I have been meaning to share for ages.

I have never been a fan of Carbonara. In theory it always sounded amazing, but in practice I have always found this cream laden pasta dish too rich and heavy. That was until my trip to Cannobio on the Italian Lakes when a waiter convinced me that I had to try it. He was right, the Italian way is the only way. Carbonara cooked with eggs and no cream is AMAZING.

Not only is this authentic Italian Carbonara delicious? It can also be tailored to suit your mood. Today I am sharing a recipe for easy carbonara with chicken and chorizo. However this can be traded for pancetta or bacon if you want to stick to the original Italian roots of the recipe.

Recipe For Easy Carbonara, No Cream, Cooked With Eggs The Italian Way

Shopping List

  • 2 chicken breasts
  • 125g chorizo or spicy Italian sausage
  • 100g parmesan
  • 2 garlic cloves
  • 3 large eggs
  • 375g spaghetti
  • Salt and black pepper to season
Easy Carbonara With Egg

Method

  • Boil a large saucepan of water .
  • Chop the chicken and slice the chorizo.
  • Finely grate the parmesan and chop the garlic.
  • Now beat the 3 large eggs in a medium bowl, season and add most of the parmesan cheese. ( Keep a bit to one side for the table).
  • Add the spaghetti to the boiling water with a pinch of salt, once boiling cover and simmer for 10-15 minutes or until its just cooked.
  • Meanwhile, fry the chicken and chorizo with the garlic until thoroughly cooked.
  • When the pasta is ready, lift it from the water with pasta tongs and place in the frying pan with the chicken and chorizo, keep the pasta water to one side, you will need this later.
  • Pour the eggs and cheese mix into your pasta. Using the tongs to mix and lift the spaghetti so it blends and coats the pasta.
  • Now ladle in the pasta water, do it 1 spoonful at a time until the consistency is silky, it will only take a few spoonfuls.
  • Serve and season with black pepper and top with fresh parmesan.

As an alternative serve with pancetta.
