Quick and Easy, Low Fat Carrot and Coriander Soup

I have been meaning to make homemade soup for ages; but kept thinking I will wait till I get time! Why ever did I think this? I love soup, but am not a fan of tinned soup, for me it has to be thick home-made soup. A soup that almost tastes fattening, even though it is low in fat and healthy to eat.

I have to say I have had a total epiphany, soup only takes 40 minutes to cook from scratch, who knew? All those times I have thought I just haven’t got time, when I in fact had all the time in the world. I think my new Judge soup maker has to be the hero of the piece. I will go as far as to say, the boys are completely in love with it.

The name soup maker is a bit of a red herring I feel, as it also acts as a blender, boils eggs and makes hot drinks too. The boys currently are on full smoothie mode and have blended everything from Oreos to bananas. I have so many ideas for different soups and smoothies we can make, and in the summer, delicious iced cocktails.

The reason I started with carrot and coriander was for no other reason that I had enough carrots in the fridge to keep the Were-Rabbit busy for a month. To the point that if I say we have carrots with dinner one more time I fear the boys may leave home. So, carrot and coriander soup it was.

For 3 good-sized portions you will need:

225g of carrots

Half a litre of vegetable stock

1 chopped potato

Half a chopped onion

Half a tsp ground coriander

A sprinkle of pepper

6g of fresh coriander

Now here is the beauty of the soup maker, it requires no attention or stirring. You just chop up your ingredients and pop them all in, ensuring that the liquid covers the ingredients.(The measurements above are perfect to fill the jug, however I made double and cooked 2 batches) Press the soup option and it heats, blends and cooks the soup in 30 minutes. Once finished it will bleep.

Cleaning the Judge soup maker is super easy too, you simply rinse the jug in warm water, refill with warm water and a tiny amount of washing liquid and put on the pulse setting for a few seconds, it really is that simple. I honestly can-not believe I never bought one of these sooner, I just know this is going to be so well used. And the carrot and coriander soup tasted delicious. Click for stockists.

    I laughed at the Were-rabbit comment. I always have about 100 carrots too and we don’t even eat them that often! Must say I LOVE your new homepage!!! xx
