I have come to the thinking that creating something a little more hearty is much more preferable than eating through a mountain of crisps that you probably don’t enjoy. Is it just me that eats for the sake of it when friends are round?

How To Make Caramelised Onion And Goats Cheese Tart

You Will Need

  • 1 red onion 
  • Spoonful of sugar
  • Half a bag of rocket 
  • 1 ready roll puff pastry 
  • 200 g packet of feta cheese
  • 1 tbs red wine vinegar
  • 50 g walnuts chopped into large pieces

How To Prepare Puff Pastry For A Tart

I use ready roll puff pastry, because who has time in their life to spend making puff pastry when shop bought is just as good?

It just so happens that ready roll puff pastry comes in the perfect size to fit on my Denby Oven Proof platter of dreams. I say of dreams as it’s one of those platters that looks amazing for serving, but you can also use it in the oven. Anyhow I digress!

Place the pastry onto grease proof paper onto your platter or a baking tray. Score a line around the edge of the pastry, about 1.5cm from the edge. This will ensure the edges puff up around the tart.

Next score the base lightly with criss cross marks before putting on your topping.

And if you prefer puff pastry tartlets? Which do look more effective as an individual starter at a dinner party, simply cut the puff pastry into smaller squares remembering to score around the edges.

Caramelised Onion And Goats Cheese Tart Method

Pre heat the oven to 200°Chop the onions into strips.

Cook in the red wine vinegar and sugar until they are soft and clear ( Takes roughly 10 minutes)

Allow the onions to cool, meanwhile roll out the puff pastry and score a line about 1.5cm from the edge all the way round. Then create criss cross score lines on the base of the pastry.

Cover the base with the onions, crumble the feta cheese and spread across the onion.

Now sprinkle the walnuts, place in the oven.

My tart took 25 mins to cook, however keep checking until the pasty is golden and firm on the baseGarnish with rocket and serve.

Yes, the last thing you want when you’re entertaining is to be messing around, rather than enjoying the company of friends.

You can prepare your puff pastry 1 day in advance. Keep it refrigerated ready to pop in the oven and serve as a snack or starter at a dinner party.

Can You Store Your Tart In The Fridge Afterwards?

Yes, however is tastes best eaten straight from the oven when warm and flaky. But does make a great cold snack with a salad too.

Tips For Cooking A Puff Pastry Tart

The puff pastry packet said 15 minutes, however my tart took 25 minutes to cook. I would advise keeping an eye and checking at intervals to ensure your goats cheese and red onion tart cooks perfectly.

To check if its cooked look for a golden flaky edge. And to ensure the base is cooked, slide it on the grease proof paper. If it slides on the paper and feels firm rather than soft and sticking to the paper then its cooked.

Recipe Variation Ideas

Try adding beetroot slices for a sweet taste and the colours look great. To prepare the beetroot, slice and roast in the oven before adding to your tart. Or for a quicker alternative buy pre steamed beetroot.

Notes
