Air Fryer Onion Bhajis

Ingredients

  • 2 whole eggs
  • 3 whole chopped onions (not frozen onions)
  • 4 oz plain flour
  • 2 tsp curry powder
  • 1 tsp cumin powder
  • 1 tsp dried coriander
  • 1 tbsp sunflower oil for frying

Instructions

  •  Beat the eggs in a mixing bow
  • Chop the onions into smallish chunks
  • Add the onions to the eggs and mix until the onions are covered
  • Add the flour, curry and spices and mix well
  • Turn on the air fryer onto 200 and warm up for 5 minutes,  then add the oil and leave for 2 minutes to heat up
  • With flour on your hands roll the mixture into 10-12 evenly shaped balls. Add half to the air fryer and fry for 8-10 minutes, turning once until golden-brown. Repeat with remaining balls.
  • Serve with a dip made of fat free yogurt and a large spoonful of mint sauce.

Notes

Perfect accompaniment to an Indian meal and very quick and easy to make.
