How To Make Slow Cooker Lamb Curry With Coconut Milk

Shopping List

  • 600g of diced lamb leg
  • 2 chopped onions
  • 3 finely chopped carrots
  • 3 crushed garlic cloves
  • 2 tbsp olive oil
  • 1 tbsp garam masala
  • 1/2 tsp chilli powder
  • 1 tsp cinnamon
  • 2 tsp ground cumin
  • A handful of chopped fresh coriander
  • 100ml lamb stock
  • 400g tin chopped tomatoes 
  • 300ml low fat fresh coconut milk
Ingredients for this recipe

Method

  1. Heat the oil in a non-stick frying pan and add the lamb to brown off in batches for around 5 mins to seal it before transfering to the slow cooker.
  2. Now add the carrots and onions to the pan and cook the onions and carrots for 10 mins to softened.
  3. Add the garlic, coriander and spices to the slow cooker, stirring in well with the lamb.
  4. Now add the chopped tomatoes, coconut milk, lamb stock, carrots and onion to the slow cooker and stir to combine.
  5. Season with salt and pepper
  6. Cook on a low heat for 6 hrs and serve with rice and nan bread, garnish with fresh coriander.

Add the coriander to your slow cooker

Recipe Variations For This Slow Cooker Lamb Curry Recipe.

For a less spicy version leave out the chilli powder.

If you want your curry to be lower in calories leave out the coconut milk and stir in fat free greek yoghurt at the end.

If you don’t fancy lamb, use beef or chicken.
