We’ve recently discovered Simply Cook which I have loved using, in this review I will share the Butternut Squash Risotto recipe and how Simply Cook is perfect to make meal times easier yet still allows you to cook fresh delicious food.

As a family we try to cook from scratch all the time, life is busy, we always seem to be doing some sort of renovation or project. Which means meal times can be rushed, but they also have to be healthy and home made.

What Is Simply Cook?

With Simply Cook you are able to cook from fresh, choosing your own fresh ingredients, but also have a choice of recipes sent to your home without the worry of receiving wilting vegetables, of poor cuts of meat. (I am so fussy about meat!)

I like to choose the quality of the meat and vegetable we buy, and this enables me the choice to do that, but also have a wealth of recipes that are quick and easy to make, with detailed step by step instructions.

How Does Simply Cook Work?

A box containing 4 recipes costs £10 and you only need to sign up to one a month, but also have the option of once a week, two weeks, or six weeks.

However the beauty is you can trial a box for the price of £3.00 and are able to choose exactly the recipes you would like to try. This I feel gave us a great idea of whether this was a recipe service that would work for us.

The boxes are compact, so you don’t need to be in to receive them and there’s no danger of them going warm on the doorstep and being ruined.

Each box comes in a pack with 3 flavour pots, and recipe card with a tear off shopping list to enable you to easily shop for supplies. Or stick to your shopping list!

The recipe cards are set out in easy follow step by instructions, giving you a timing guide and recipe suggestions should you want to add to the recipe. And here’s the key, when you are busy you don’t want complicated and simple cook isn’t, which makes it a real winner.

Easy Roasted Butternut Squash with simply cook

Simply Cook Review, Butternut Squash Risotto

Before trying the butternut squash risotto, we tried the Chicken Makhani which was divine, so I felt pretty confident that the Simply Cook Butternut Squash Risotto was going to be equally as good.

I want to share how simple and easy the butternut squash risotto was to prepare and cook. As I really am not a fan of over complicated, so love the fact that this recipe was simple to create and it went down a storm.

Shopping List For Simply Cook Butternut Squash

  • 1 small onion
  • 150g arborio rice
  • 350g butternut squash cut into cubes ( I bought a whole butternut squash which was way to much. I made a curry with it the next day! However you can also buy pre cut in bags which would save so much time)
  • 20g parmesan
  • A handful of parsley
  • Olive oil
  • 30g butter

Optional Extras ( I added these)

  • 2 slices of prosciutto
  • 30g pine nuts
You will need

How To Make

Start by heating the oven to 200°, chop the butternut squash into cubes and toss in al little oil, season with salt and pop into the over to roast for 20 minutes.

Chop the butternut sqush into chunks and toss in oil before seasonimg with salt

Mix 750ml of boiling water with the vegetable stock and put to one side.

Mix the stock ready for the risoto rice

Now chop the onions and fry in oil before adding the roasted garlic paste pot and mixing.

Add the rice and stir in well, next mix in the risotto spice blend.

Add the spices the the risoto

Start to ladle in the stock 2 ladles at a time and allow the rice to absorb it before ladling in the next batch.

Keep doing this until you have added all the stock and the rice has absorbed all liquid, this takes 15-20 minutes.

Add the roasted butternut squah to the cooked risotto

Once the rice is cooked, remove the roasted butternut squash from the oven and stir in the butter, most of the parmesan and parsley.

How to make home made butternut squash with simply cook

Now sprinkle the pine nuts, parmesan and prosciutto and garnish with parsley and serve.

My Thoughts On Simply Cook?

I love it, I can’t believe how many messages I have had on instagram from people who are huge fans.

One reader told me she cooks a Simply Cook recipe every Saturday night rather than a take away, which is something I am going to try going forward. It’s great food without have to think, which tastes amazing, what’s not to love about that?
