Before you start ensure the Prosecco and soda water has been chilled before hand.

Add 25 ml of cocchi to a Champagne glass

Now top up with 75ml of Prosecco and 50ml soda water.

top up with Prosecco leaving a little room for soda for a beautiful Pink Cocktail Recipe

Now add the candy floss, however the secret here is to not let the candy floss touch the cocktail as it will dissolve immediately. It’s best to gently grab a handful trying not to touch the top. You want to keep the candy floss as fluffy as possible and handling it can flatten it.

You almost want to create a plug so it sits just in the top of the glass almost like its floating.

Now add a straw. Ok I know you wouldn’t normally drink from a champagne glass with a straw, however this gives guests the opportunity to drink their cocktail whilst retaining the candy floss top. Or alternatively use the straw to push the candy floss into the glass. Thus allowing it to dissolve and transform the cocktail into a sweet sugary pink cocktail.
