I  just had to share this slimming world BBQ pulled pork recipe. It’s a wonderful low fat slow cooker recipe, which makes the perfect easy midweek meal.

It’s hard adapting to a healthy eating plan, for me the key was making it a life change to healthy low fat recipes. Deciding that actually changing my thought plan on how what and when I eat was much more productive than feeling I am on a diet and wanting to eat everything in sight.

This is a recipe I have cooked many times when having friends over for supper and it always goes down so well. Which generally results in my guests taking the recipe away with them to make at home. I love how you can make dinner parties healthier occasions, which makes entertaining a whole lot easier.

The beauty of this easy slimming world recipe is that you can prepare it in advance.

Thanks to the trusty slow cooker you can whip up an easy one pot slimming world pulled pork that can be cooked over-night, or popped in early in the morning to be ready in the evening. And I am all for pre preparing, it makes our busy family life so much easier. Thus giving us time for the important stuff. You know, the after school chaos, homework, clubs and family life.

How To Cook Slimming World BBQ Pulled Pork?

Ingredients For BBQ Slow Cooker Pulled Pork

  • 3-4 lb pork shoulder (trim all the fat off, not for the faint hearted eeew, but keep going its worth it)
  • 5 tbsp Worcester sauce
  • 1 tsp mustard powder
  • 500 g passata
  • 3 tbsp balsamic vinegar 
  • 2 cloves of garlic, crushed  I really struggled crushing ! So chopped)
  • 3 tbsp sweetener
  • 1/2 tsp salt and pepper

How To Make Slimming World BBQ Pulled Pork

Place all the ingredients except for the pork into a pan and bring to the boil, keep stirring until it thickens.

Put the pork in a slow cooker pour over the sauce and leave on high for 6-8 hours.

For the last hour take the lid off and turn the slow cooker down to reduce the sauce to make your pulled pork sticky and delicious

Shred the pork and serve.

When I think of slimming world pulled pork I always image it served with a brown roll, corn on the cob, salad and wedges. Its one of my favourite meals and tastes like it shouldn’t be healthy. However there are many ways to also serve pulled pork with or without bread.

Serve with rice for an extra hearty winters meal

Or mashed potatoes and vegetables

Its amazing with tacos or fajitas

On a pizza, not slimming world friendly but tastes amazing

Pulled pork is delicious on a jacket potato

Or as a side to a hearty salad.

How To Make Slimming World Wedges

Cut 4 large potatoes into wedge sized chunks.

Part boil them until you can easily pierce with a fork.

Drain them and then roughly and shake in a pan to roughen up the edges and make them fluffy.

Place in an oven proof dish, spray with frylite and grind some salt over to flavour.

Cook in the oven on 200 degrees for around 45 minutes until crispy.

Can You Freeze Slow Cooker Pulled Pork?

Yes, I have done this many times, I cook this recipe in a large batch and then freeze in meal size portions once cool. However remember to thoroughly defrost on before reheating. It can also be kept in the fridge for 48 hours.

This slimming world recipe is low in fat and if made from scratch is full of fresh ingredients. Pork is also a good source of protein, vitamins and minerals. including thiamin, selenium, protein, niacin, vitamin B6 and phosphorus.

Slimming world pulled pork recipe perfect for cooking in the slow cooker

Ingredients

    Buying this outside can be pricey so I am planning to make my own.

    Do you do it with like slow cooking for hours? Is there a faster way?
