The football season has started. Having children who selflessly sign themselves up for 3 teams!  I fully support being in 1 team, footballs a wonderful sport but 3?

With busy life comes the desire to feed the boys all that is easy and quick.  Yet I promised myself I would endeavour to make meals from scratch where I could this year. And it’s a resolution I aim to keep. 

Why? Because I want to know exactly what is the boy’s food. With every spoonful of sugar and ingredient in my control. And I have to say that feels good. Knowing the boys are eating healthy meals.

But lets start with the obvious, get shopping delivered! Why spend time trailing round supermarkets when you can do an online list? If I go into a supermarket I come out with so much stuff I don’t need! Online shopping saves soooooo much time that quite honestly I can think of a million other ways to spend my time other than shopping.

I used Rio Mare who have a range of tuna products on offer. I have to say the tuna was delicious and not sloppy at all like sometimes I find with tinned tuna. The ingredients felt authentic, a great base to cook from.

Keeping this resolution during the week is hard to maintain. But with a little preparation and planning it is achievable. I have been happily preparing cornflake chicken as a great takeaway alternative and tasty home made pizzas.

Today I want to share a quick and easy midweek family meal, something you can just throw in the oven that tastes great. It is also an easy meal for one, perfect for if hubby is working away and the kids are busy.

I know tuna pasta bake is not rocket science, but its bit of an overlooked meal in our house. Something I rarely think of making, so last week I thought I would give it a go. I chose a busy night to see if it really does work as a quick midweek meal. And hoorah tuna pasta bake is a winner its quick, easy and tasty. Its also a cheap meal to feed the family.

Having teens means homework chasing and checking! Grrrrr!

The time I spend on the fine art of getting homework done is sooooo frustration. Why can’t I just say have you got homework? Joe answers yes and does homework. But no, we have a chasing scenario that goes on like a battle of wills until he finally concedes and does said homework. Which of course wastes so much time, in which I could have cooked beef wellington!

The quick and simple midweek meal is not to be sniffed at. It’s all about serving with tasty veg such a roasted carrots and sweet potato wedges with delicious garlic bread and keeping it healthy.

Finding the right recipes for easy midweek dinner gives Chris and I more time to spend with the boys hearing about their days and ensuring they are eating tasty food. Oh and picking up from various locations, including football training and chasing homework. So if you are looking for a quick Monday night dinner idea this could just be a winner.

To Make Tuna Pasta Bake

Ingredients

  • 300 g dried pasta
  • 1 tin of sweetcorn
  • 1 tin of Rio Mare Tuna
  • 350 g Italian cherry tomatoes
  • 6 spring onions
  • A sachet of tuna pasta bake
  • Cheese to sprinkle
  • To serve with
  • Garlic Baguette
  • A packet of trimmed carrots
  • 1 packet of pre cut sweet potato wedges

Instructions

  1. Boil the pasta, but don’t boil for the full time, leave it slightly underdone
  2. Wash the carrots and put in an ovenproof dish with the sweet potato wedges
  3. Drizzle with oil and put in the oven at 170º
  4. Once the pasts is boiled and drained mix up the pasta sauce with milk.
  5. Put the pasta, tuna, corn, tomatoes, chopped spring onions, and peppers in an oven proof dish
  6. Mix in the pasta sauce
  7. Place in the oven with the garlic bread and already cooking vegetables
  8. Cook for 20 minutes
  9. Serve with grated cheese

  1. I am all for online delivery as we have been using Sainsburys online for about 4 years now. This looks delicious and I am always on the look out for different mid week meals. I always tend to stick to the same ones x

  2. I’m TOTALLY with you!!! I can’t actually remember the last time I went shopping to a supermarket!!! Having our weekly shop delivered is the best invention ever!! Haven’t heard of Ciao Gusto — am off to Google it — this looks fab Sarah!! 🙂

  3. Oh I’m all about the quick and easy these days – midweek mealtimes are so busy! Haven’t cooked tuna pasta back for years, probably not since I was a student but we are all huge pasta fans so thanks for the reminder :)) x

  4. I can so relate to this! My kids do a gazillion things after school and in the evenings and so do we so it’s all about quick and easy food that’s healthy and with no dairy. It can be a tall order at times! Tuna pasta bake is a great one, though my youngest still refuses tuna so I have to do a separate fish free one for her! xx

  5. This sounds delicious! With the huge bonus being that I think my entire family would eat this. It’s so hard to find something they all like. I’m totally with you on struggling to find the time to cook healthy and fresh. Sometimes it’s not even just about finding the time, but that I’m just to tired to faff! xx
