I have felt it more than ever this week that spring is coming nearer. Lighter evenings, glorious blue skies and sunny days. Yes, it’s freezing cold. But that feeling in the air has changed and the birds are singing loudly again. I get to this point and the excitement is palpable, I love winter, cold frosty evenings, snow, even the sound of rain on my windows as I snuggle down at night.

But I also love summer, the feeling of warmth on your skin and late summers evenings make me long for summer to come quickly.

When the lovely people from Alpha Rooms asked me to cook up a dish that remind me of Spain, it had to be Paella. A favourite dish of ours, yet one I had never attempted to cook. Paella is most definitely a dish of choice for me, it reminds me of hot balmy summers evening and holidays. All I needed to do now was to learn to cook it.

I of course enlisted the help of Jamie Oliver, and Chris as my chopping assistant, so I suppose you could say the success of this dish was a real team effort.

Why have I never tried to cook it before? Yes, I ask myself this question now, as it is such a simple dish to make, and sooo delicious. In fact I plan to invite friends round very soon so I can show off my new found Spanish Cooking skills.

So here I am writing a post about following a recipe, how amazing am I, not? But the point is, I stick to the same recipes and meal plan almost religiously. When with a little planning it is so simple to try something new, and push yourself. We are all capable of whipping up great dishes in the kitchen. Just ask an expert, follow a recipe and you like I may just be surprised by what you can achieve. Either that or you are an amazing cook anyway!

Some people were born with a natural flair for cooking, I wasn’t. Trust me I still have not mastered how to boil and egg, I kid you not! But I can follow a recipe; the problem for me is confidence, and concentration.

I have to be so focused or it all ends in disaster, all it takes is a butterfly to land on a flower outside the window, I excitedly run to get the camera, and then ooh look at those lilies I will take a photo of them. Ooh I have just remembered I need to text a friend. You get the picture, before I know it Chis is nodding his head and scraping burnt offerings into the bin and starting again.

But hey, this girl (I know girl is stretching it a little) can cook if she concentrates. I can make a more complex dish, I now just need to master that blooming egg. But check out Jamie’s amazing Paella recipe that is easier than boiling an egg.

    Oh yum that looks so nice I’ll have to try it, paella is one of my absolute favourite things to eat, with a large glass of wine! x

    Ooh Sarah, that looks so good! I love to cook Paella, anything where you can just throw it all in a pan is good for me. It is a rule to have wine with Paella too, that’s why it’s one of my favourites 🙂 xx

    Sarah I am so with you on the boiling an egg. Your paella looks delicious and something that I have never tried. I hope you had it with a large glass of wine x
