Eggs and Ham

When we had the food testing night at slimming world, one of the ladies bought in Eggs and Ham, they had talked about it the previous week and I wasn’t sure I would like it, however it was delicious.
So I thought I would have a go at making at home. 
In a silicon muffin tray, line a muffin case with 2 slices of wafer thin ham. Then grate a little cheese into it, and crack an egg into the ham nest.


Finnish by grating a little cheese on top. 

Bake in the oven on 180 degrees for about 20 mins.

When cooked, gently lift out with a desert spoon and serve with a slice of brown toast.

This was a realy quick, easy, tasty and healthy breakfast. A little like a healthy version of eggs benedict. In fact I bought some hollandaise sauce for next time I make it ,I can have a table spoon for 1.5 sins. Mmmm cant wait.
