Healthy Chicken Fried Rice

























I decided to cook chicken fried rice yesterday; I have not cooked this for years. A friend who was on a diet gave me the recipe after we ate it at her house and loved it.
Healthy Chicken Fried Rice
















You will need;


2 Chicken breasts
Dark Soya Sauce 100 ml
Lime Juice 20 ml
Half a small tin of water chestnuts
Spring Onions
1 finely chopped red onion
Garlic
1 quarter of a chilli pepper
10 finely chopped mushrooms
Long grain rice
1 sweet pepper

Method;
Cook the chicken breasts in the over then shred them.
Boil the Rice.
Cut the pepper in half and roast in the oven.

Meanwhile fry the onion, garlic and mushrooms
Add the lime juice and soya sauce
Add the shredded chicken, rice and spring onions.
Stir and serve with rocket, chopped chilli and roasted sweet pepper.
