Baileys Mudslide Cocktail Recipe

Have you ever wanted a product, but settled for a different one? Well, I did that very thing last year. I so wanted a Nespresso Machine but in the end decided on another brand of machine.

It was fine, did what it said on the tin. But I never got over the fact that it was not a Nespresso, every time I walked past the Nespresso boutique at Trafford Centre I kicked myself. I wanted to be in there trying out all the flavours. I wanted to display the pretty pods in a jar in my kitchen. And then last week when I was looking for a new kettle on the House of Fraser web site I noticed the coffee machines. So I did it, I ordered a shiny new Nespresso.

Prior to my machine coming I headed to the Nespresso Boutique to buy coffee, I tried loads, bought quite a few and made loads of new friends at the coffee bar. I have to say my favourite flavour is Vanilla. Although I have a list of coffee’s that I love and plan to re order.

I had also planned to write a summer cocktail post for the Iconic Light Blog. And after reading Julia at Rainbeaubelle’s Nespresso Cocktail recipe I decided that was what I would do. I mean we can all make coffee, right? But at this time of year it is also very useful to be able to whip up a quick cocktail; for long hot summer afternoons and guests.

I decided on a version of the Bailey’s Mudslide, which for me is a real treat.

Although this is a cocktail it also loiters ever so slightly in dessert territory. And is perfect to serve after a meal.

Nespresso Baileys Frozen Mudslide

Ingredients

  • 4 fl oz of Baileys
  • 4 fl oz of Vodka
  • 2 shots of espresso (I used chocolate Nespresso)
  • 4 large cups of crushed ice
  • 6 large scoops of chocolate ice cream
  • 2 dark chocolates

Instructions

  1. Blend the crushed ice, Baileys, Vodka and espresso together
  2. Add the ice cream and give a couple of pulses to blend before pouring into large cocktail glasses and returning to the freezer. (Speed is important at this stage to prevent the ice cream melting.)
  3. Return to the fridge for 5 minutes, then grate chocolates on the top and serve.

  8. Treat my Mum who would rather give anyone her last 1p than spend it on herself. She’s 70 this year too, so it would be great to treat her to something. Thank you for the chance.
