A couple of weeks ago I had a delivery that got me so so giddy. The ever so wonderful postman and the lovely people from Domu.co.uk delivered me a shiny black retro VonShef stand mixer. This felt like the perfect opportunity to try and make a chewy meringue recipe.

I lovingly unpacked it and put in pride of place in my black gloss kitchen, it looks great! But I have also been putting this little beauty through its paces. Joe and I made cup cakes with it last week and it was fantastic.

I have always wanted to find the perfect chewy meringue recipe.

I remember my first attempt at chewy meringues 20 years ago, 18 eggs later and no meringues! Then. a few years ago I managed them but they were a bit golden! Not exactly white like I had envisaged.

Now I had my mixer there really was no excuse, thus yesterday I set the whole day aside for mastering a meringue recipe.

Hurrah, I managed to create a pink swirl, and white glossy chewy meringue recipe and they tasted great.

Here is my chewy meringue recipe, cobbled together from loads of different recipes, but it worked for me.

How To Make Chewy Meringues With Pink Swirls

Ingredients

  • 180 g caster sugar
  • 120 g Icing sugar
  • 4 egg whites
  • 1/4 teaspoon cream of tartar
  • A pinch of salt
  • A drop of vanilla essence
  • Pink or red food colouring

Instructions

  1. Pre heat the over at 120 degrees.c
  2. Whisk the egg whites on high speed until the whites fall in peaks
  3. Next Add the salt and cream if tartar
  4. Put the sugar in a spoonful at a time and keep whisking until the mixture is glossy, but do not over mix
  5. Add the vanilla essence
  6. Put the mixture into piping bags and pipe in swirls on baking sheets lined with grease proof paper, being sure to leave a space in between.
  7. With cocktail sticks swirl red food colouring gently onto meringues to create a swirl pattern
  8. Put in the oven for 1 hour being sure to turn down to 100 degrees c after 30 mins
  9. Leave to cool on a wire rack.

Notes

Be sure the mixing bowl is clean of grease and dust before using.

Cook Time: 1 hour
Total Time: 1 hour 15 minutes

How To Make Chewy Meringues With Pink Swirls

  1. Sarah, I have NEVER been able to make meringues!! These look absolutely amazing. And gorgeous photos. I like any cake which contains chocolate. If it doesn’t contain chocolate then, quite frankly, it’s not a cake … it’s a disappointment.

    • Ha ha Rachel, its funny I am more of a coffee and walnut kinda girl, I think its because I am more of a dark chocolate fan so creamy milky chocolate just doesn’t do it for me x

  2. wow soo many… carrot cake with butter icing….. bakewell tart with a good dash of almond…Victoria sponge…with butter icing and raspberry jam… and I adore coffee and walnut cake…

  3. Oh gosh this is a toughie as I like coffee cake, chocolate cake and carrot cake it would be impossible to choose between the three. Or though it really came down to it I’m guessing the coffee cake would win hands down, but ssssh please don’t tell the others lol.xx

    I love banana and walnut cake, but unfortunately I’m on a diet, so I would bake for everybody else
    I suppose I could lick the bowl on the quiet!!

  5. It takes a lot to beat a lovely Lemon drizzle cake, washed down with a nice brew. Yum! However as I am a bit of a cake addict, any thing with a deliciously light sponge will be acceptable! 😉

  6. My favourite cake depends on my mood – I love red velvet cake as long as it has the really tangy cream cheesy icing on the top. Otherwise it’s probably a chocolate fudge cake or a lemon drizzle…So many to choose from!

  7. With several members of the family being dairy free and one gluten-free it is often hard to find something really special but a Spanish Orange & Almond Cake fits the bill and is delicious!

  9. Cherry and Almond cake. It has to be moist, very almondy, and stuffed full of plump glacé cherries. I’ve made myself hungry now so I’ll have to go and make one!

  10. I have never been able to make meringue either… but now I will have another attempt as I do love a lemon meringue 🙂
    My favourite cake is a close call between a Victoria sponge and carrot cake. I suppose the final decision comes down to what mood i’m in.

  12. Mary Berry’s Chocolate & Rum Cake (without the rum!!). I feel your pain with meringues, but I’m really lucky with them – whether they’re meringue shells or pavlova – it’s our go-to birthday cake!

  13. I love a coffee and walnut but rarely make them because I’m the only member of the household that does like them. If I made one I’d have to eat the whole thing myself! To be honest though, I’ve never met a cake I don’t like so I’m happy with any alternative too.

    Thank you for the giveaway and post on meringues. My mother and grandmother used to be able to whip up pavlovas and batches of meringues without a recipe. They were always divine. Mine were always chewy!

  17. Well there’s 2. Coffee and Walnut, my Mum also makes a lovely fruit cake with brown sugar which she has had in a recipe book my Grandma had, so it’s a very old recipe. Delicious hot with butter melting into it.

  18. It has to be a chocolate cake. There’s something so satisfying about them, especially when accompanied with chocolate buttercream icing. I made one at the weekend actually! (and it’s nearly all gone already!)

  19. My favourite cake is carrot cake with cream frosting yum… I have a great recipe for it and its really easy to make. What a fantatsic giveaway – love the retro mixer it would come in very handy in my kitchen and the black and chrome would match perfectly xx

  20. Coffee and Walnut is my ultimate favourite. I go all weak when I see them in a tea or coffee shop. I love making them too, but eat too much! Meringues are probably my least successful bakes. I don’t know why.

  22. Being gluten free its meringue. Iv done lots of experimenting and my biggest hit was a hazelnut meringue roulade. So easy to make but taste fantastic!

  25. Even I feel like I could make meringues……Id love to make an edible sponge cake. I love baking, baking doesn’t love me….but I will continue to torture my family with my attempts in the vain hope that one day I will hear those words I long to hear…..”mum that was delicious”
